The tricks companies use to hide the worst
Ingredient lists are required by law. But the law only specifies what must be written, not how it should be presented to consumers. Within that gray area, food companies have developed sophisticated techniques to present their products in the best possible light—even when the ingredients aren't exactly healthy.
The order rule: most abundant first
By law, ingredients must be listed in descending order by weight. The first ingredient is present in the largest quantity, the last in the smallest. This rule is useful, but it's exploited cleverly.
Example: a baked good with the list "wheat flour, sugar, palm oil, cocoa..." appears to have sugar in second position, suggesting an acceptable amount. But if the serving size is a 10-gram cookie and the nutrition label shows 40 grams of sugar per 100 grams, you're eating a lot of sugar. The position in the list doesn't tell you the absolute amount—that's what the nutrition label is for.
The fractured sugar trick: the most common of all
This is the most widely used trick in the food industry. Added sugar can appear in many different forms, each with a different name: sucrose, fructose, glucose, glucose syrup, fructose syrup, high-fructose corn syrup, invert sugar, dextrose, maltose, maltodextrins, cane sugar, evaporated cane juice, agave syrup, powdered honey, concentrated fruit juice.
By listing two or three of these forms in the ingredient list, each appears lower than a single "sugar" entry would. The total sugar in the product can be very high, but no single item looks dominant. To see through this trick: always check the "sugars" line on the nutrition label, not the ingredient list.
Technical names to deceive consumers
Palm oil: sounds better as "vegetable oils," "vegetable fats," or "fractionated vegetable fat." These generic terms were allowed until 2014, when Europe mandated that the source of vegetable oil always be specified (palm oil, coconut oil, etc.). Older products or those from outside the EU may still use the generic form.
Artificial flavors: simply called "flavors" or "natural flavors." The definition of "natural" for flavorings is much broader than most people think: a flavor chemically extracted from any biological source (even bacteria or yeast) can be labeled "natural." It's not the same as a flavor derived from the actual fruit or ingredient it evokes.
Hidden salt: salt appears in many different forms: salt, sea salt, sodium chloride, sodium bicarbonate, monosodium glutamate (contains sodium), chemical leavening (contains sodium bicarbonate). A product may have few "salt" entries but high total sodium thanks to these multiple ingredients.
Minimal quantities that don't appear
If an ingredient makes up less than 2% of the product, its components don't need to be listed separately—just the group name. "Spices" can contain any spice. "Flavorings" can contain dozens of different chemical substances. "Sauce" in the list may not be further detailed if it's under 2%.
Allergen order: an opportunity for transparency
Since 2014, allergens must be highlighted in the ingredient list (in bold, underlined, or in a different color). This is a real transparency win. The 14 major allergens that must always be declared and highlighted: gluten, crustaceans, eggs, fish, peanuts, soy, milk and dairy products, tree nuts (almonds, hazelnuts, walnuts, cashews, pecans, pistachios, Brazil nuts, macadamia), celery, mustard, sesame, sulfur dioxide and sulfites, lupin, mollusks.
Clean label vs. actual ingredients
The "clean label" trend has pushed many companies to replace additives with E-codes with ingredients that sound more natural but serve the same function. Modified starch no longer appears, but "potato starch syrup" does. E407 (carrageenan) gets replaced with "red algae extract." The chemical result is identical; the marketing image is very different.
How to read ingredient lists effectively
Start from the end: the last ingredients are present in the smallest quantities, often additives and flavorings. If the list is very long with many ingredients you don't recognize, it's a sign of a heavily processed product. Look for your "main" ingredient: if you're buying orange juice, orange should be the first ingredient. If it's not, it's not really orange juice.
Companies spend millions making undesirable ingredients invisible. You have a free weapon: knowing how to read the ingredient list. Use it every time, without exception.
Five red flags in an ingredient list
First: the list is very long (more than fifteen items) with many technical names. Second: three or more different forms of sugar appear. Third: the first or second ingredient isn't what you'd expect from the product (orange juice with water and sugar first, then concentrated orange juice in third place). Fourth: "vegetable oils" appear without specifying which kind. Fifth: the list is dominated by starches, syrups, and thickeners you don't recognize.
The test of ingredients you can pronounce
An empirical rule from Michael Pollan, food journalist and author: don't eat anything with ingredients you can't pronounce or that didn't exist in your grandmother's kitchen. It's not scientifically absolute, but it's an effective practical filter. Try it with products you buy regularly: how many ingredients don't you recognize?
Compare the lists of two similar products
Take two products from the same category—one you consider quality and one budget-friendly. Compare their ingredient lists item by item. Usually the differences are obvious: simpler, recognizable ingredients versus a long list of additives, syrups, starches. Doing this exercise even once per product category will give you a clear idea of what to look for.
Use the list to spot disguised palm oil
Since 2014 it must be declared explicitly. Look for it in cookies, snack cakes, spreads, frozen foods, crackers. If it's there, decide whether to accept it occasionally or find an alternative. It's not the absolute poison that anti-palm marketing portrays, but consumed frequently it contributes to saturated fat intake.
